High Protein, Chocolate Peanut Crunch Bars
These Chocolate Peanut Crunch Bars no-bake homemade crunch bars are a quick and easy treat, perfect for a healthy snack or a sweet indulgence. You’ll need only 10 ingredients and less than 10 minutes of prep time, using a single bowl for minimal cleanup. The main ingredient, drippy natural peanut butter, can be substituted with any nut or seed butter of your choice, making this recipe highly adaptable to different dietary preferences or allergies.
This recipe is part of my Feel Good Treats Summer series, where we’re all about enjoying your favorite treats but making them healthier so you feel really freaking good! All the treats are damn delicious and also happen to be gluten-free, dairy-free, refined sugar-free, anti-inflammatory, and mostly vegan.

Protein Peanut Crunch Bars

No Bake homemade crunch bars using just one bowl, 10 ingredients and less than 10 minutes!
Ingredients
1 cup Drippy Natural Peanut butter (can substitute any nut or seed butter)
1/3 cup Honey (melted) or maple syrup
2 Tablespoons coconut oil, melted
1 1/2 teaspoons vanilla
1/2 teaspoon salt
1/2 cup of collagen protein powder
3/4 cup chocolate chips, melted (I like enjoy life brand)
1/4 cup hemp seeds
1/4 cup sesame seeds
1 cup Puffed Rice Crisps*
flakey Salt, to top
Directions
Line an 8 x 8-inch baking dish or deep baking tray of choice with parchment paper and set aside.
In a medium bowl mix together peanut butter, honey or maple syrup, coconut oil, and vanilla together until smooth. *If your peanut butter is not drippy, but quite firm add more coconut oil*. Add in collagen protein and . mix together. Add in melted chocolate and mix. Lastly, add in puffed rice, hemp seeds and sunflower seeds and mix together until combined. Mix quickly before the mixture starts to harden as the chocolate cools. I like to use my hands to mix it!
Pour into an 8x8inch pan lined with parchment paper and Press it down firmly!
Sprinkle with flakey maldon sea salt (and press in to help it stick) and let it set in the freezer for up to an hour. Cut into bars and then you can store it in the fridge or freezer. Enjoy!
Notes
*Look for puffed rice without added sugar. aka not rice crispies brand
